Title: Carrot & Coconut Salad

4 Carrots; peeled & grated
2tbFinely grated coconut
2tbFinely shredded onion
1tbLemon juice
2tbChopped coriander leaves
1 Fresh green chili pepper - seeded & coarsley chopped - (opti

Mix together all ingredients in a bowl, except salt. Stir in salt just before serving.
